Google was always terrible when it comes to market niches.
SEO is really a long term effort. So before you get to the point where you reap the SEO fruits of your labor you are either a dead startup or close to being a unicorn. So SEO is definitely not the decisive factor.
What it really helped with was figuring out the target audience.
What happened to me was I built a cool product for what I thought was my target audience. And I did not succeed with them.
I left my project to rot on my servers for a few years. To my surprise I got very light traffic from random people. One surprising group was mid sized to large companies willing to pay one thousand bucks a year. And that was without me doing anything.
Here and there a customer appeared out of nowhere coming from Google. Not enough to quit my job but enough to show me I was completely wrong about my imagined audience.
So it brought in random traffic that helped me figure out who the real audience was. But besides that I never felt like organic SEO had any real impact on my niche business.
