It really depends on where on the client’s site that you put the link.
If it’s a link in the site’s footer, there’s specific guidance from Google that says those links need to be “nofollow” links, which would not pass any PageRank.
If the client site is not on topic to your site, there may be some tools that say you’re gaining some sort of “authority”, but it may not help rankings. Especially if the topic of the client site is not the same as your site.
Adding the links may get you more clients–in that people viewing the client site might like what they see and contact you. That’s about all.
The only way to “remove” linkjuice is to get a penalty.
No, you do not steal their linkjuice with a link.
Also, you do not only need links from sites with more authority than yours. Someone asked me this once. They were like, do links from sites with smaller authority hurt our site? No, they help!
All links (most links) share linkjuice. Be careful of the type of link, though. If you’re getting footer links on every page, that could be spammy which might not help you.
You won’t harm your clients, and you won’t get any “juice.” Google will probably ignore the link unless it’s in context.
